Mexican Lasagna

Last night, my mom went to dinner with a friend, so I took the opportunity to use the kitchen! I thought about what to make the whole way home from work, and came up with this...












Ingredients:
4-6 large soft tortillas
1 lb. ground beef
2 cups mild cheddar cheese
1 jar of salsa (I used medium, but mild or spicy will do!)
1 large white onion
Cumin, salt and pepper, to taste

Directions:
1. Preheat oven to 375* F
2. On stove, heat a large skillet. Once hot, reduce heat to medium-high and let ground beef start to cook.
3. While meat is cooking, dice the onion. Once diced, add onion to beef and cook until meat is well-done. Season meat with a good bit of cumin, and salt and pepper to taste.
4. Add salsa. (I also added a little bit of heavy cream. Sour cream would also be good here.) Stir and reduce heat to a simmer.
5. Cut tortillas into slices, and start layer on the bottom of casserole dish.
6. Next, add meat and salsa.
7. Then 1 cup of cheese.
8. Start layers again: Tortilla, meat, and then the rest of the cheese.
9. Bake for 20 minutes.

Garnish with some fresh cilantro, and you're ready to enjoy this yummy dinner!
